Ce Nuits-Saint-Georges 1er Cru Les Perrières 1979 du Domaine Bouchard Père & Fils a probablement le poids des années. Dégustez le avec des plats d'automne. Description Présentation du vin Nuits-Saint-Georges est bien connu des amateurs de vin de Bourgogne. Cette appellation prestigieuse offre des vins de caractère, riches, souvent propices à la garde. Rare village de la Côte de Nuits à ne pas avoir de Grand Cru, Nuits-Saint-Georges est néanmoins la capitale de la Côte de Nuits, les Champs-Elysées de la Bourgogne. L'appellation Nuits-Saint-Georges s'étend sur 2 communes Premeaux-Prissey et Nuits-Saint-Georges. A dominante rouge, il existe à peine 10ha plantés de Chardonnay. Les Perrières est un terroir classé en premier cru situé au sud de l'appellation. Le sol est très peu profonde et très vite les racines doivent se frayer un passage dans les fissures de la roche-mère. Les vins de 1979, en Bourgogne rouge, sont classés comme "bon millésime". La récolte était importante en quantité et le soleil de septembre a permis aux raisins de mûrir. Le millésime est certes moins concentré que dans d'autres millésimes où la quantité est moindre. Ce Nuits-Saint-Georges 1er Cru Les Perrières 1979 de la Maison Bouchard Père et Fils a vieilli dans les caves du domaine jusqu'à la fin des années 2000. Notre fidélité au Domaine Bouchard Père et Fils nous a permis d'acquérir quelques trésors, de vieux millésimes qui n'étaient plus proposer à la vente. Le niveau de la bouteille témoigne des bonnes conditions de conservation. Avec un vin de 1979, il faut s'attendre à des arômes tertiaires, de champignons, de sous-bois, voir des notes un peu plus animales. Laisser ce vin se reposer au moins un mois après réception, en position couchée. Il est également conseiller de mettre la bouteille en position debout 24h avant de le déguster, de déboucher la bouteille au dernier moment et de le décanter délicatement en carafe afin de laisser le dépôt dans la bouteille, puis servir.
